A standard 9-inch springform pan has the same 63.6 sq inch surface area as a regular 9-inch round cake pan. However, springform pans have 3-inch tall walls (holding 10–11 cups), whereas standard round cake pans have 2-inch walls (holding 8 cups).
If baking a cheesecake or torta in a standard 2-inch cake pan, line the sides with parchment paper collars extending 1.5 inches above the rim, or ensure batter does not exceed 2/3 depth.
